Middle East Lamb Tagine with Apricots


This recipe was taken from centuries old cooking techniques and when possible applied modern cooking methods and/or ingredients.  It uses Asian cooking styles, Asian Spices, Asian Sauces and Asian Ingredients.  The style of cooking may have a slight alteration while still maintaining the dish's overall purpose.  In this blog we touch on recipes that may be predominant for the Chinese Cuisines.  We will also share recipes based upon country, or regions such as: Burma, Cambodia, Indian, Indonesia, Japan, Korea, Laos, Malaysia, Nepal, Philippines, Singapore, Sri Lanka, Taiwan, Thailand, Tibet and Vietnam.  Some cuisines are considered South Asian, South East Asian, Central Asian and/or Middle Eastern and may not be strictly connected to a specific country or culture.



Recipe makes for 4 Servings

2 tbsp all purpose flour

salt and pepper

1.5 lb lamb from leg or shoulder, cut into 1-in cubes

3 tbsp olive oil

1 onion, sliced

1 tsp ground coriander

1 tsp ground cumin

1/2 tsp cardamom seeds

2 cloves garlic, crushed

3 cups chicken stock

3/4 cup dried apricots

1/2 lemon, thinly sliced

8 fresh apricots, halved and pitted

1/4 cup chopped fresh parsley, for garnish

2 cups instant couscous

salt

2 cup boiling water

3 tbsp butter


Directions:


Place flour and salt and pepper to taste in a plastic bag. Add lamb pieces and shake until pieces are coated. In a large heavy saucepan over medium-high heat, heat 2 tbsp oil.

Add lamb pieces, in batches, and cook, stirring, until browned on all sides, 3-4 minutes. Drain lamb on a plate lined with paper towels.

In pan over medium heat, add onion and heat remaining 1 tbsp oil. Cook until soft, about 5 minutes. Add spices and garlic and cook for 1 minute.

Return meat to pan and add stock and dried apricots. Bring to a boil and simmer, uncovered, stirring occasionally, for 1 hour.


Add lemon slices and fresh apricots and simmer until apricots are tender, about 10 minutes. Season to taste with salt and ground pepper.
