India Lamb Chops with Sweet Pomegranate Glaze


This recipe was taken from centuries old cooking techniques and when possible applied modern cooking methods and/or ingredients.  It uses Asian cooking styles, Asian Spices, Asian Sauces and Asian Ingredients.  The style of cooking may have a slight alteration while still maintaining the dish's overall purpose.  In this blog we touch on recipes that may be predominant for the Chinese Cuisines.  We will also share recipes based upon country, or regions such as: Burma, Cambodia, Indian, Indonesia, Japan, Korea, Laos, Malaysia, Nepal, Philippines, Singapore, Sri Lanka, Taiwan, Thailand, Tibet and Vietnam.  Some cuisines are considered South Asian, South East Asian, Central Asian and/or Middle Eastern and may not be strictly connected to a specific country or culture.



Recipe makes for 4 Servings

3 lbs lamb chops

salt to season

1/4 cup pomegranate concentrate for glazing

MARINADE:

3 tomatoes, peeled, deseeded and chopped

2 tbsp oil

juice of 1 lime

zest of 1 lemon

2 tbsp pomegranate concentrate

1 large onion, finely chopped

1/4 cup chopped fresh cilantro leaves

1/4 cup chopped fresh mint leaves

1/2 tsp ground cinnamon

1/4 tsp ground cloves

3 green cardamom pods, crushed to a powder

1/4 heaping tsp grains of paradise seeds, crushed

pinch of freshly ground nutmeg


Directions:


Add the ingredients for the marinade in a food processor and grind until smooth. 

Rub the chops with the spice paste and let them marinate in the refrigerator for a few hours or preferably overnight.

Scrape excess marinade off the meat and sprinkle the meat with some salt. In a saucepan bring the leftover marinade to a simmer for a few minutes. Remove from the heat and serve as a dipping sauce.

Prepare the grill with medium and high heat. Just before grilling, oil the hot grate.

Place the meat on the grate over the high heat zone and grill each side for about 2-3 minutes. Move the meat to the medium heat zone and continue grilling for 2-4 minutes, turning regularly and glaze regularly with the pomegranate concentrate.


Test for doneness by poking the meat and see if juice run clear.
