How to Make Indian Goan Fish Asian Cooking Recipe Cuisine

This recipe was taken from centuries old cooking techniques and when possible applied modern cooking methods and/or ingredients. It uses Asian cooking styles, Asian Spices, Asian Sauces and Asian Ingredients. The style of cooking may have a slight alteration while still maintaining the dish's overall purpose. In this blog we touch on recipes that may be predominant for the Chinese Cuisines. We will also share recipes based upon country, or regions such as: Burma, Cambodia, Indian, Indonesia, Japan, Korea, Laos, Malaysia, Nepal, Philippines, Singapore, Sri Lanka, Taiwan, Thailand, Tibet and Vietnam. Some cuisines are considered South Asian, South East Asian, Central Asian and/or Middle Eastern and may not be strictly connected to a specific country or culture.
Recipe makes for 4-6 Servings
1-1.5 cups red chilies broken into small pieces
1/3 cup coriander seeds
1/4 cup cumin seeds
3/4 cup white vinegar
1 tbsp finely grated fresh ginger
1 tbsp crushed garlic
2 tsp ground turmeric
1/2 cup vegetable oil and melted unsalted butter combined
1 lb yellow onions, about 3 medium, halved and sliced
2 large tomatoes, unpeeled, quartered
2 fresh green chilies, slit lengthwise
2.5 cups coconut milk
salt to taste
2 lb white-fleshed fish fillets
Directions:
In a spice grinder, grind dried chilies, coriander seeds and cumin seeds to a powder. Place in a bowl and combine with vinegar, ginger, garlic and turmeric to form a paste. Set aside.
In a large pan, heat oil and and butter mixture over medium-low heat. Add onions and coo, uncovered, stirring often, until soft, about 10 minutes.
Add spice paste and cook, stirring, until fragrant, about 3 minutes. Add tomatoes, green chilies and coconut milk and cook, uncovered, stirring often, until tomatoes soften, about 5 minutes. Season with salt.
Make sure fish are in serving pieces. Add fish to sauce and cook, uncovered, until fish flakes when tested with a fork, about 5 minutes. Serve with steamed rice.
