Japan Spicy Tahini Tofu with Sesame Crackers


This recipe was taken from centuries old cooking techniques and when possible applied modern cooking methods and/or ingredients.  It uses Asian cooking styles, Asian Spices, Asian Sauces and Asian Ingredients.  The style of cooking may have a slight alteration while still maintaining the dish's overall purpose.  In this blog we touch on recipes that may be predominant for the Chinese Cuisines.  We will also share recipes based upon country, or regions such as: Burma, Cambodia, Indian, Indonesia, Japan, Korea, Laos, Malaysia, Nepal, Philippines, Singapore, Sri Lanka, Taiwan, Thailand, Tibet and Vietnam.  Some cuisines are considered South Asian, South East Asian, Central Asian and/or Middle Eastern and may not be strictly connected to a specific country or culture.



Recipe makes for 6-8 Servings

1 tbsp caster sugar

2/3 cup white sesame seeds

2 tsp cracked pepper

2 tbsp tahini

1/2 cup plain flour

1/4 cup soy flour

2 egg whites, lightly beaten

1/4 cup soy sauce

2/3 cups canned soybeans, drained

5 oz soft or silken tofu, drained

1/3 cup lemon juice

1/4 cup tahini

2 tsp white miso

salt and pepper

2 garlic cloves, finely chopped

2 tbsp finely chopped fresh parsley

1 tbsp chopped chives

1/4 tsp cayenne pepper or finely chopped, seeded chili

Directions:


To make sesame crackers, preheat oven to 350 degrees F. Line  a baking sheet with parchment paper.

In a large bowl, combine sugar, sesame seeds, pepper, 2 tbsp tahini, flours, egg whites and soy sauce and stir well. Spread mixture onto baking sheet and bake until crisp, 10-15 minutes. Cut into pieces while warm or let cool and break into pieces by hand.


In a food processor, puree soybeans until fairly smooth. Add tofu, lemon juice, tahini, miso, salt, pepper and garlic and process until smooth. Stir in parsley, chives and cayenne. Serve with sesame crackers and vegetable sticks.
