Vietnam Stir-Fried Pork with Peanuts, Lime and Basil


This recipe was taken from centuries old cooking techniques and when possible applied modern cooking methods and/or ingredients.  It uses Asian cooking styles, Asian Spices, Asian Sauces and Asian Ingredients.  The style of cooking may have a slight alteration while still maintaining the dish's overall purpose.  In this blog we touch on recipes that may be predominant for the Chinese Cuisines.  We will also share recipes based upon country, or regions such as: Burma, Cambodia, Indian, Indonesia, Japan, Korea, Laos, Malaysia, Nepal, Philippines, Singapore, Sri Lanka, Taiwan, Thailand, Tibet and Vietnam.  Some cuisines are considered South Asian, South East Asian, Central Asian and/or Middle Eastern and may not be strictly connected to a specific country or culture.



Recipe makes for 4 Servings

3 tbsp peanut oil

1 lb pork tenderloin, cut into fine strips

4 spring onions, chopped

4 garlic cloves, finely chopped

1 1/2 inch ginger, peeled and finely chopped

2 green or red Thai chilies, seeded and finely chopped

1/2 cup shelled, unsalted peanuts

grated zest and juice of 2 limes

2 tbsp fish sauce

2 tbsp grated fresh coconut

1/2 cup chopped fresh mint leaves

1/2 cup chopped fresh basil leaves

1/2 cup chopped fresh cilantro leaves


Directions:

Heat a large wok or heavy pan and pour in 2 tbsp oil. Add the pork tenderloin and sear over a high heat until browned. Transfer the meat and juices to a plate and set aside. 

Wipe the wok or pan clean and return to the heat. Pour in the remaining oil and add spring onions, garlic, ginger and chilies. Stir fry until the aromas rise then add the peanuts and stir fry for 1-2 minutes.


Return the meat and its juice to the wok or pan then stir in the lime rind and juice and the fish sauce. Add the fresh coconut and herbs and serve over sticky rice or with rice wrappers.
