How to Make Malaysian Deep-Fried Chicken Balls Asian Cooking Recipe Cuisine

Malaysia Deep-Fried Chicken Balls


This recipe was taken from centuries old cooking techniques and when possible applied modern cooking methods and/or ingredients.  It uses Asian cooking styles, Asian Spices, Asian Sauces and Asian Ingredients.  The style of cooking may have a slight alteration while still maintaining the dish's overall purpose.  In this blog we touch on recipes that may be predominant for the Chinese Cuisines.  We will also share recipes based upon country, or regions such as: Burma, Cambodia, Indian, Indonesia, Japan, Korea, Laos, Malaysia, Nepal, Philippines, Singapore, Sri Lanka, Taiwan, Thailand, Tibet and Vietnam.  Some cuisines are considered South Asian, South East Asian, Central Asian and/or Middle Eastern and may not be strictly connected to a specific country or culture.



Recipe makes for 30 pieces

2 oz dried rice vermicelli

1 lb ground chicken

3 cloves garlic, finely chopped

1 tbsp chopped fresh ginger

1 fresh red chili, seeded and finely chopped

1 egg, lightly beaten

4 tbsp chopped fresh cilantro leaves

1/3 cup plain flour

1/3 cup finely chopped water chestnuts

oil, for deep frying

DIPPING SAUCE:

1/2 cup sweet chili sauce

1/2 cup soy sauce

1 tbsp Chinese rice wine

Directions:


Put the vermicelli in a heatproof bowl, cover with boiling water and soak for 6-7 minutes. Drain, then cut into short lengths.

Combine the ground chicken, garlic, ginger, chili, egg, spring onion, cilantro, flour and water chestnuts in a large bowl. Mix in the chopped lengths of vermicelli, then season with a little salt. Cover with plastic wrap and refrigerate for 30 minutes. Roll heaped tablespoons of the mixture into balls. 

Fill a wok or deep saucepan one-third full with oil and heat to 350 degrees F. Deep fry the balls in batches for 2 minutes or until golden brown and cooked through, then drain on crumpled paper towels.


To make the sauce, combine the ingredients. Serve with the hot chicken balls. Provide toothpicks or cocktail pieces to pick up the hot balls.
