India Fragrant Pomegranate Scented Lamb Burgers


This recipe was taken from centuries old cooking techniques and when possible applied modern cooking methods and/or ingredients.  It uses Asian cooking styles, Asian Spices, Asian Sauces and Asian Ingredients.  The style of cooking may have a slight alteration while still maintaining the dish's overall purpose.  In this blog we touch on recipes that may be predominant for the Chinese Cuisines.  We will also share recipes based upon country, or regions such as: Burma, Cambodia, Indian, Indonesia, Japan, Korea, Laos, Malaysia, Nepal, Philippines, Singapore, Sri Lanka, Taiwan, Thailand, Tibet and Vietnam.  Some cuisines are considered South Asian, South East Asian, Central Asian and/or Middle Eastern and may not be strictly connected to a specific country or culture.



Recipe makes for 6 Servings

2 slices white bread

1 tsp cumin seeds, toasted

4 green cardamom pods, toasted

4 cloves, toasted

1 tsp coriander seeds, toasted

2 lbs ground lamb

3 tbsp extra virgin olive oil

5 cloves garlic, finely chopped

1/2 cup finely chopped fresh flat leaf parsley

1 egg

1/2 cup finely chopped onion

3 tbsp pomegranate concentrate

3 tsp sumac

salt to taste

2 tbsp melted butter

Directions:


Remove the crusts from the bread, cut into small cubes and soak in warm water until soft. Grind the toasted spices to a fine powder.

In a large bowl, add the ground lamb, bread, ground spices, olive oil, garlic, parsley, egg, onion, 1 tbsp concentrate, sumac and salt and knead well. Let rest for 30 minutes in the refrigerator. Moisten hands and make patties.

Grill the burgers over medium heat and grill for about 6-12 minutes while basting regularly with butter.


Towards the end of the grilling time, baste with the remaining 2 tbsp of pomegranate concentrate to give the burgers a nice glaze.
