South Asia Festive Duck Curry


This recipe was taken from centuries old cooking techniques and when possible applied modern cooking methods and/or ingredients.  It uses Asian cooking styles, Asian Spices, Asian Sauces and Asian Ingredients.  The style of cooking may have a slight alteration while still maintaining the dish's overall purpose.  In this blog we touch on recipes that may be predominant for the Chinese Cuisines.  We will also share recipes based upon country, or regions such as: Burma, Cambodia, Indian, Indonesia, Japan, Korea, Laos, Malaysia, Nepal, Philippines, Singapore, Sri Lanka, Taiwan, Thailand, Tibet and Vietnam.  Some cuisines are considered South Asian, South East Asian, Central Asian and/or Middle Eastern and may not be strictly connected to a specific country or culture.



Recipe makes for 4 Servings

1 tbsp peeled and grated fresh ginger

4 cloves garlic, finely chopped

2 tbsp rice vinegar

1 lb boneless duck breast fillets, skin on, cut into strips 1/4-inch wide

2 tbsp vegetable oil

1 onion, chopped

2 tsp ground cumin

2 tsp ground coriander

1 tsp chili powder

2 tomatoes, peeled and chopped

1 cup chicken stock

1 tbsp fish sauce

1 tsp ground pepper

2 tbsp chopped fresh cilantro


Directions:


In a small bowl, combine ginger, garlic and vinegar. Put duck in baking dish. Add ginger mixture and toss until well coated. Cover and refrigerate for 1 hour.

In a wok or large skillet, heat oil over medium heat and fry onion until soft, about 1 minute. Add cumin, coriander and chili powder. Fry for 1 minute.

Add duck and marinade. Fry until duck is opaque, 4-5 minutes. Add tomatoes and stir fry for 3 minutes. Stir in stock and fish sauce and pepper. Reduce heat to low, cover and simmer until duck is tender, 10-12 minutes.


Stir in cilantro and spoon into serving bowls. Serve with steamed rice.
