How to Make Japanese Grilled Eggplant Asian Cooking Recipe Cuisine

Japan Grilled Eggplant


This recipe was taken from centuries old cooking techniques and when possible applied modern cooking methods and/or ingredients.  It uses Asian cooking styles, Asian Spices, Asian Sauces and Asian Ingredients.  The style of cooking may have a slight alteration while still maintaining the dish's overall purpose.  In this blog we touch on recipes that may be predominant for the Chinese Cuisines.  We will also share recipes based upon country, or regions such as: Burma, Cambodia, Indian, Indonesia, Japan, Korea, Laos, Malaysia, Nepal, Philippines, Singapore, Sri Lanka, Taiwan, Thailand, Tibet and Vietnam.  Some cuisines are considered South Asian, South East Asian, Central Asian and/or Middle Eastern and may not be strictly connected to a specific country or culture.



Recipe makes for 2 Servings

1 large eggplant (about 7oz), sliced thickly

salt

2 tbsp sesame seeds, toasted

MARINADE:

4 green onions, finely chopped

1 tbsp Japanese soy sauce

1 tbsp sugar

1 tbsp vegetable oil

2 cloves garlic, finely chopped


Directions:


Sprinkle the eggplant slices with salt and set aside for 30 minutes. Rinse and pat dry.

In a small bowl, combine the ingredients for the marinade.

Prepare the grill for direct grilling with two heat zones.

Just before grilling, oil the hot grate. Place the eggplant on the grate over high that and grill each side for 3-4 minutes. 

Move to medium heat and continue to grill for another 4-5 minutes or until the eggplant becomes very soft. Baste from time to time with the marinade.


When done, place the grilled eggplant slices on a serving platter and drizzle the remaining marinade over the top. Sprinkle on the sesame seeds and serve immediately.
