How to Make Indian Frontier Lamb Chops Asian Cooking Recipe Cuisine
India Frontier Lamb Chops
This recipe was taken from centuries old cooking techniques and when possible applied modern cooking methods and/or ingredients. It uses Asian cooking styles, Asian Spices, Asian Sauces and Asian Ingredients. The style of cooking may have a slight alteration while still maintaining the dish's overall purpose. Recipe makes for 4 Servings
12 lamb chops
SPICE RUB
1 1/2 tsp coriander seeds, toasted
1/2 tsp black peppercorns, toasted
1 tsp cumin seeds, toasted
6 cloves garlic, chopped
1 tsp chili flakes
1 tsp lime zest
2 tbsp chopped fresh mint leaves
1 tbsp chopped fresh cilantro leaves
CRUST:
2 tbsp extra-virgin olive oil
2 tbsp unsalted pistachios, shelled and lightly crushed
2 tbsp hazelnuts, lightly crushed
2 tbsp sesame seeds
Directions:
To make the rub, place the toasted spices in a mortar or food processor and grind to a powder. Add the garlic, chili flakes, lime zest, mint and coriander leaves and grind to a paste.
Rub the paste on all sides of the chops and let marinate in the refrigerate for 3 hours.
In a small bowl, combine the ingredients for the crust. Also, preheat grill with medium and high heat zones.
Just before grilling, oil the hot grate. Place the chops on the grate over the high heat zone and grill each side for about 2-3 minutes. Baste again with the spice paste and apply crust mixture onto the moist meat.
Continue to grill for 2-4 minutes, turning frequently until a nice crust has formed. Poke with your finger to test for doneness or use a thermometer.
