How to Make Chinese Chicken with Ginger Asian Cooking Recipe Cuisine

China Chicken with Ginger


This recipe was taken from centuries old cooking techniques and when possible applied modern cooking methods and/or ingredients.  It uses Asian cooking styles, Asian Spices, Asian Sauces and Asian Ingredients.  The style of cooking may have a slight alteration while still maintaining the dish's overall purpose.  In this blog we touch on recipes that may be predominant for the Chinese Cuisines.  We will also share recipes based upon country, or regions such as: Burma, Cambodia, Indian, Indonesia, Japan, Korea, Laos, Malaysia, Nepal, Philippines, Singapore, Sri Lanka, Taiwan, Thailand, Tibet and Vietnam.  Some cuisines are considered South Asian, South East Asian, Central Asian and/or Middle Eastern and may not be strictly connected to a specific country or culture.



Recipe makes for 4-6 Servings

1 cup cloud or tree ear mushrooms

1/4 cup vegetable oil

6 cloves garlic, coarsely chopped

1 small onion, thinly sliced

12 oz boneless, skinless chicken breasts, thinly sliced

1 cup loosely packed, julienned fresh ginger, preferably young

1 tbsp fish sauce

3 tbsp oyster sauce

1 tbsp soy sauce

1 tbsp soybean paste

2 fresh long red chilies, cut into large pieces

1/2 cup chicken stock or water

8 shallots, white part only, chopped


Directions:


If using dried mushrooms, soak in water for 10 minutes; drain. Use scissors to trim hard core, then cut mushrooms into pieces.

In a wok or large, heavy frying pan over high heat, heat oil and fry garlic just until it starts to brown. Immediately add onion and chicken and stir fry until meat is opaque on all sides, about 2 minutes.

Add ginger and mushrooms, then fish sauce, oyster sauce, soy sauce and soybean paste. Stir fry for 1 minute. Add chilies and stock or water, bring to a boil and cook for 1 minute. Stir in shallots.


Transfer to a serving dish and serve.
