China Grilled Shrimp with Black Bean Sauce


This recipe was taken from centuries old cooking techniques and when possible applied modern cooking methods and/or ingredients.  It uses Asian cooking styles, Asian Spices, Asian Sauces and Asian Ingredients.  The style of cooking may have a slight alteration while still maintaining the dish's overall purpose.  In this blog we touch on recipes that may be predominant for the Chinese Cuisines.  We will also share recipes based upon country, or regions such as: Burma, Cambodia, Indian, Indonesia, Japan, Korea, Laos, Malaysia, Nepal, Philippines, Singapore, Sri Lanka, Taiwan, Thailand, Tibet and Vietnam.  Some cuisines are considered South Asian, South East Asian, Central Asian and/or Middle Eastern and may not be strictly connected to a specific country or culture.



Recipe makes for 4 Servings

2 lbs jumbo shrimp with tails, peeled and cleaned

6 skewers

2 tbsp sesame seeds, toasted

MARINADE: 

1 tbsp neutral oil

1 tbsp finely chopped green onion

1 tbsp peeled and finely chopped fresh ginger

1 tbsp black bean sauce

2 tbsp light soy sauce

1 tbsp Shaoxing wine or dry sherry

2 tbsp sugar


Directions:


To make marinade, place oil in a small skillet and set over medium heat. Add the green onion and ginger and sauté for a few minutes or until glassy. Add the rest of the marinade ingredients and simmer for 2-3 minutes. Remove from the heat and set aside to cool.

Cut the shrimp in half lengthwise but leave the halves together at the tail end. In a bowl, combine the cooled marinade and shrimp and let marinate for 30 minutes.

Thread the shrimp onto skewers. In a saucepan, bring remaining marinade to a simmer and set aside for use as a basting sauce.

Grill the skewers over medium heat for about 6-9 minutes, basting with the leftover marinade.


When the shrimp turns white and bright orange and are firm, it is done. Sprinkle sesame seeds over the shrimp when just about done and grill for about a while longer only until the sesame seeds are toasted but not burnt.
