East Asia Lime and Chili Sardines with Green Aioli
This recipe was taken from centuries old cooking techniques and when possible applied modern cooking methods and/or ingredients. It uses Asian cooking styles, Asian Spices, Asian Sauces and Asian Ingredients. The style of cooking may have a slight alteration while still maintaining the dish's overall purpose. In this blog we touch on recipes that may be predominant for the Chinese Cuisines. Some cuisines are considered South Asian, South East Asian, Central Asian and/or Middle Eastern and may not be strictly connected to a specific country or culture.
Recipe makes for 4 Servings
36 fresh sardines, cleaned, heads removed and butterflied
2 tbsp vegetable oil
1 tsp grated lime zest
1 tbsp lime juice
1 small red chili, seeded and finely chopped
1 tbsp chopped fresh cilantro leaves
1/4 tsp sea salt
1/4 tsp freshly ground black pepper
1.5 cups mizuna
AIOLI:
6 shallots, coarsely chopped
1/4 cup chopped fresh basil leaves
3 cloves garlic, chopped
3 egg yolks
2 tbsp lemon juice
3/4 cup olive oil
salt and pepper
Directions:
Pat sardines dry with paper towel and place in a shallow nonmetallic dish. In a small bowl, combine 2 tbsp oil, zest, juice, chili, cilantro, salt and pepper and mix well.
Brush over sardines and let stand for 5 minutes. Preheat grill pan or barbecue then brush grill with oil. Grill sardines for 1-2 minutes each side. Remove from grill.
To serve, arrange mizuna on serving plates and top with warm sardines. Serve with aioli.
AIOLI: In a food processor, combine shallots, basil, garlic, egg yolks and lemon juice. Process until smooth, about 30 seconds. Gradually add olive oil while food processor motor is running and process until the mixture becomes a thick sauce. Add salt and pepper to taste.
