How to Make Indian Tandoori Lamb Chops Asian Cooking Recipe Cuisine
India Tandoori Lamb Chops
This recipe was taken from centuries old cooking techniques and when possible applied modern cooking methods and/or ingredients. It uses Asian cooking styles, Asian Spices, Asian Sauces and Asian Ingredients. The style of cooking may have a slight alteration while still maintaining the dish's overall purpose. Recipe makes for 4 Servings
1-inch piece fresh ginger, peeled and chopped
6 cloves garlic, chopped
2 lbs lamb chops
5 green cardamom pods, toasted
1/2-inch piece cinnamon, toasted
1/2 tsp cumin seeds, toasted
1/2 tsp coriander seeds, toasted
1/4 tsp ground nutmeg
1 tbsp black pepper
2 tsp chili flakes
1/2 cup plain yogurt
Directions:
In a mortar or food processor, crush the ginger and garlic to a paste. Rub the lamb chops with this paste. Set aside for 30 minutes.
In a mortar or food processor, add the toasted spice and grind to a powder. Pass through a fine sieve and regrind the larger parts. Remove any remaining unground parts. Add the nutmeg, black pepper, chili flakes and yogurt and mix well.
Apply half of the yogurt-spice mixture to the lamb chops and let marinate for at least a few hours or overnight. Reserve the remaining half of the yogurt mixture for basting.
Prepare the grill with medium and high heat. Just before grilling, oil the hot grate.
Remove the meat from the marinade and wipe excess marinade off the chops. Use other half of the marinade for use as a basting sauce.
Place meat on the grate over the high heat zone and grill each side for about 2-3 minutes until nicely browned. Move meat to the medium zone and continue grilling each side for 2-4 minutes, turning regularly and basting with the yogurt-spice mixture. When done to your liking, let rest for a few minutes and serve.
