India Spicy Chicken Skewers with Mint Yogurt
This recipe was taken from centuries old cooking techniques and when possible applied modern cooking methods and/or ingredients. It uses Asian cooking styles, Asian Spices, Asian Sauces and Asian Ingredients. The style of cooking may have a slight alteration while still maintaining the dish's overall purpose. In this blog we touch on recipes that may be predominant for the Chinese Cuisines. Some cuisines are considered South Asian, South East Asian, Central Asian and/or Middle Eastern and may not be strictly connected to a specific country or culture.
Recipe makes for 2 Servings
1 lb chicken breast fillets
3 tsp ground coriander
2 tsp ground turmeric
1 small red chili, seeded and finely chopped
4 cloves garlic, finely chopped
2 tbsp caster sugar
1 tsp sea salt
12 skewers
2 tbsp peanut oil
6.5 oz. choy sum
MINT YOGURT:
1/2 cup plain yogurt
2 cloves garlic, finely chopped
2 tbsp chopped fresh mint leaves
1/4 cup peeled, seeded and chopped cucumber
Directions:
In a small bowl, combine yogurt, garlic, mint and cucumber. Mix until well combined. Cover and chill before serving.
Cut chicken fillets into 1.5 inch cubes. In a small bowl, combine ground coriander, turmeric, chili, garlic, sugar and salt.
In a bowl, toss chicken pieces in spice mixture. Cover bowl with plastic wrap and refrigerate for 2 hours. Thread chicken onto bamboo skewers.
Preheat a grill pan or barbecue then brush grill with oil. Grill chicken skewers until golden and tender, 2-3 minutes each side.
Steam or blanch choy sum in boiling water until tender crisp, about 3 minutes, then drain. Serve chicken warm with mint yogurt and steamed choy sum.
