South East Asia Chili Noodle Crab Cakes


This recipe was taken from centuries old cooking techniques and when possible applied modern cooking methods and/or ingredients.  It uses Asian cooking styles, Asian Spices, Asian Sauces and Asian Ingredients.  The style of cooking may have a slight alteration while still maintaining the dish's overall purpose.  In this blog we touch on recipes that may be predominant for the Chinese Cuisines.  We will also share recipes based upon country, or regions such as: Burma, Cambodia, Indian, Indonesia, Japan, Korea, Laos, Malaysia, Nepal, Philippines, Singapore, Sri Lanka, Taiwan, Thailand, Tibet and Vietnam.  Some cuisines are considered South Asian, South East Asian, Central Asian and/or Middle Eastern and may not be strictly connected to a specific country or culture.



Recipe makes for 4 Servings

4 oz cellophane noodles

vegetable oil as needed

8 large fresh basil leaves

6 oz fresh or canned crabmeat

1/3 cup coconut milk

1 tbsp red curry paste

2 eggs, beaten

1 tbsp fish sauce

2 tbsp chopped fresh cilantro

2 tsp lime juice

1 small red chili, seeded if desired, and sliced (optional)


Directions:


Soak noodles in boiling water for 10 minutes. Drain and pat dry with paper towels.

Preheat oven to 350 degrees F. Brush 8 cups of a standard muffin pan with oil. Place a basil leaf in each muffin cup. Line cups with noodles, dividing evenly.

In a bowl, combine crabmeat, coconut milk, curry paste, eggs, fish sauce, cilantro and lime juice. Mix well. Pour over noodles.

Bake cakes until firm to touch, 15-20 minutes. Remove from oven and allow to cool in pan.


Remove from pan and serve warm with a chili sauce. Garnish with chili slices, if desired.
