How to Make Thai Grilled Seafood Curry Asian Cooking Recipe Cuisine

Thailand Grilled Seafood Curry


This recipe was taken from centuries old cooking techniques and when possible applied modern cooking methods and/or ingredients.  It uses Asian cooking styles, Asian Spices, Asian Sauces and Asian Ingredients.  The style of cooking may have a slight alteration while still maintaining the dish's overall purpose.  In this blog we touch on recipes that may be predominant for the Chinese Cuisines.  We will also share recipes based upon country, or regions such as: Burma, Cambodia, Indian, Indonesia, Japan, Korea, Laos, Malaysia, Nepal, Philippines, Singapore, Sri Lanka, Taiwan, Thailand, Tibet and Vietnam.  Some cuisines are considered South Asian, South East Asian, Central Asian and/or Middle Eastern and may not be strictly connected to a specific country or culture.



Recipe makes for 4 Servings

12 jumbo shrimp, peeled and deveined, tails intact

16 scallops, cleaned

12 oz swordfish, cut into 2 1/2 inch chunks

1/4 cup peanut oil

6 1/2 oz baby green beans

3-4 tsp green curry paste, to taste

2 tsp add'l peanut oil

2 cloves garlic, finely chopped

1 1/2 cups thin coconut cream or coconut milk

3 kaffir lime leaves, crushed

3 tsp fish sauce

2 tsp soy sauce

1 tsp brown sugar

1 tbsp chopped fresh basil leaves

1 tbsp chopped fresh cilantro leaves


Directions:


Pat seafood dry with paper bowl and brush with oil. Preheat a grill pan or barbecue. Working in batches, grill shrimp until changes in color, 2-3 minutes. Grill scallops until opaque flesh turns white, 2-3 minutes and grill fish until firm, about the same time. 

Blanch green beans in a saucepan of boiling water for 2 minutes, then drain. Combine beans and seafood, cover and keep warm.

In a saucepan over medium heat, combine curry paste, 2 tsp oil and garlic. Stir until aromatic, about 2 minutes. Stir in thin coconut cream, lime leaves, fish sauce, soy sauce and sugar.


Reduce heat to low and simmer for 10 minutes. Do not allow to boil. Remove from heat and stir in basil and cilantro. Serve with rice.
