South East Asia Pork with Ginger and Lime Sauce


This recipe was taken from centuries old cooking techniques and when possible applied modern cooking methods and/or ingredients.  It uses Asian cooking styles, Asian Spices, Asian Sauces and Asian Ingredients.  The style of cooking may have a slight alteration while still maintaining the dish's overall purpose.  In this blog we touch on recipes that may be predominant for the Chinese Cuisines.  We will also share recipes based upon country, or regions such as: Burma, Cambodia, Indian, Indonesia, Japan, Korea, Laos, Malaysia, Nepal, Philippines, Singapore, Sri Lanka, Taiwan, Thailand, Tibet and Vietnam.  Some cuisines are considered South Asian, South East Asian, Central Asian and/or Middle Eastern and may not be strictly connected to a specific country or culture.



Recipe makes for 4 Servings

3 tbsp fresh lime juice

2 tsp peeled and grated fresh ginger

2 cloves garlic, finely chopped

2 tbsp honey

2 tbsp soy sauce

3 tbsp dry sherry

salt and pepper

4 butterfly pork chops about 3.5 oz each

1 lb pumpkin butternut squash, peeled and seeded and cut into 2-inch pieces

1/4 cup chopped fresh cilantro leaves

3 tbsp vegetable oil


Directions:


In a shallow dish, combine lime juice, ginger, garlic, honey, soy sauce, sherry and salt and pepper to taste. Add pork and turn to coat with marinade. Cover and refrigerate for 30 minutes.

Bring a saucepan of water to a boil. Add squash and cook until soft, 8-10 minutes. Drain, place in a bowl and mash with a fork or potato masher. Add cilantro and stir to combine. Season with salt and pepper. 

Preheat oven to 225F.

Remove pork chops from marinade, reserve marinade. Pat pork dry with paper towels. In a frying pan over medium heat, warm vegetable oil. Add pork and cook until tender, 3-4 minutes per side.

Remove from pan, place on a heatproof plate and keep warm in preheated oven. Add reserved marinade to a pan, bring to a boil and cook for 1 minute. 


Divide squash among individual plates. Top with pork, drizzle with warm pan juices and serve.
