Cambodia Wheat Noodles with Stir-Fried Pork


This recipe was taken from centuries old cooking techniques and when possible applied modern cooking methods and/or ingredients.  It uses Asian cooking styles, Asian Spices, Asian Sauces and Asian Ingredients.  The style of cooking may have a slight alteration while still maintaining the dish's overall purpose.  In this blog we touch on recipes that may be predominant for the Chinese Cuisines.  We will also share recipes based upon country, or regions such as: Burma, Cambodia, Indian, Indonesia, Japan, Korea, Laos, Malaysia, Nepal, Philippines, Singapore, Sri Lanka, Taiwan, Thailand, Tibet and Vietnam.  Some cuisines are considered South Asian, South East Asian, Central Asian and/or Middle Eastern and may not be strictly connected to a specific country or culture.



Recipe makes for 4 Servings

8 oz pork loin, cut into thin strips

8 oz dried wheat noodles, soaked in lukewarm water for 20 minutes

1 tbsp peanut oil

2 garlic cloves, finely chopped

2-3 spring onions, trimmed and cut into bite size pieces

3 tbsp kroeung

1 tbsp tuk trey or fish sauce

2 tbsp unsalted roasted peanuts, finely chopped

chili oil, for drizzling

MARINADE:

2 tbsp tuk trey

2 tbsp soy sauce

1 tbsp peanut oil

2 tsp sugar


Directions:


In a bowl, combine the marinade ingredients and stir until the sugar dissolves. Toss in the strips of pork until well-caoted. Put aside for 30 minutes.

Drain the wheat noodles. Bring a large pan of water to a boil and drop in the noodles, making sure they're not tangled together. Cook for 4-5 minutes, until tender. Allow the noodles to drain thoroughly, then divide among individual serving bowls. Keep noodles warm.


Meanwhile, heat a wok. Add the oil and stir-fry the garlic and spring onions, until fragrant. Add the pork, tossing it around the wok for 2 minutes. Stir in kroeung and tuk trey for 2 minutes. Add the pork on top of the noodles. Sprinkle peanuts over the top and drizzle with chili oil to serve.
