Vietnam Pork Cooked in a Clay Pot with Coconut


This recipe was taken from centuries old cooking techniques and when possible applied modern cooking methods and/or ingredients.  It uses Asian cooking styles, Asian Spices, Asian Sauces and Asian Ingredients.  The style of cooking may have a slight alteration while still maintaining the dish's overall purpose.  In this blog we touch on recipes that may be predominant for the Chinese Cuisines.  We will also share recipes based upon country, or regions such as: Burma, Cambodia, Indian, Indonesia, Japan, Korea, Laos, Malaysia, Nepal, Philippines, Singapore, Sri Lanka, Taiwan, Thailand, Tibet and Vietnam.  Some cuisines are considered South Asian, South East Asian, Central Asian and/or Middle Eastern and may not be strictly connected to a specific country or culture.



Recipe makes for 4 Servings

2 tbsp sugar

2 tbsp fish sauce

6 tbsp coconut water

12 oz pork shoulder, boned and cut into bite size strips

3 1/2 oz fresh coconut, grated

1 tsp ground black pepper

salt

chopped fresh cilantro


Directions:


Put sugar in a  pan with 2 tsp water. Heat until it dissolves and turn to a caramel color. Remove from the heat and leave to cool.

In a bowl, combine the caramel with the fish sauce and coconut water. Toss the pork strips in the mixture, making sure they are thoroughly coated, then cover and leave to marinate for 1-2 hours. While still in the bowl, add the grated coconut with the pepper and mix well.

Transfer the pork and the marinating juice to a clay pot or heavy pot and pout in 1/2 cup water. Bring to a boil, stir del and reduce the heat.

Cover and simmer for 5 minutes. remove the lid and simmer for a further 5 minutes or until the sauce has thickened. Season to taste and garnish with the cilantro. Serve with rice.

*Coconut milk is different from coconut water. Coconut water is normally a murky colored water that you get when cracking the coconut open.
