How to Make Chinese Buddha's Delight Asian Cooking Recipe Cuisine

China Buddha's Delight


This recipe was taken from centuries old cooking techniques and when possible applied modern cooking methods and/or ingredients.  It uses Asian cooking styles, Asian Spices, Asian Sauces and Asian Ingredients.  The style of cooking may have a slight alteration while still maintaining the dish's overall purpose.  In this blog we touch on recipes that may be predominant for the Chinese Cuisines.  We will also share recipes based upon country, or regions such as: Burma, Cambodia, Indian, Indonesia, Japan, Korea, Laos, Malaysia, Nepal, Philippines, Singapore, Sri Lanka, Taiwan, Thailand, Tibet and Vietnam.  Some cuisines are considered South Asian, South East Asian, Central Asian and/or Middle Eastern and may not be strictly connected to a specific country or culture.



Recipe makes for 4 Servings

4 oz. dried rice noodles

8 cups vegetable stock

2 cloves garlic, peeled and chopped

1-inch piece fresh ginger, peeled and sliced

1 stalk lemongrass or zest of 1 lime, cut into 1-inch pieces

ground white pepper to taste

1 tbsp soy sauce or to taste

1 tbsp lime juice or to taste

8 oz pumpkin or butternut squash, cut into 1-inch cubes

4 oz green beans

8 ears of baby corn

1 carrot, peeled and julienned

1 bunch baby bok choy, leaves separated

1 green bell pepper, seed and sliced

4 oz snow peas

1 tomato, cut into 1-inch cubes

2 sprigs fresh herbs like basil, cilantro or chives

4 sprigs mint, for garnish

Directions:


Bring a large saucepan of water to a boil and add noodles. Remove from heat and allow to stand until soft, 4-5 minutes. Drain and divide among individual bowls.

Place stock in a large saucepan over medium-high heat, cover and bring to a boil. Add garlic, ginger, lemongrass, white pepper, soy sauce and lime juice, reduce heat to simmer and cook for about 1 minute.


Add pumpkin, beans, corn and carrot and cook until tender-crisp, about 2 minutes. Add bok choy, bell pepper, snow peas, tomato and herbs and cook until vegetables are tender, about 3 minutes. Ladle over noodles and garnish with mint. Serve with chili paste.
