Thailand Roasted Vegetables with Herbs
This recipe was taken from centuries old cooking techniques and when possible applied modern cooking methods and/or ingredients. It uses Asian cooking styles, Asian Spices, Asian Sauces and Asian Ingredients. The style of cooking may have a slight alteration while still maintaining the dish's overall purpose. In this blog we touch on recipes that may be predominant for the Chinese Cuisines. We will also share recipes based upon country, or regions such as: Burma, Cambodia, Indian, Indonesia, Japan, Korea, Laos, Malaysia, Nepal, Philippines, Singapore, Sri Lanka, Taiwan, Thailand, Tibet and Vietnam. Some cuisines are considered South Asian, South East Asian, Central Asian and/or Middle Eastern and may not be strictly connected to a specific country or culture.
Recipe makes for 4-6 Servings
1 red bell pepper, seeded and quartered
1 yellow bell pepper, seeded and quartered
3 red onions, peeled and quartered
10 oz beets, trimmed and quartered
1 lb potatoes, quartered
1 lb pumpkin or butternut squash, peeled and cubed
10 oz zucchini, cut into 2-inch slices
8 whole cloves garlic, unpeeled
3 lemongrass stalks, cut into 2-inch lengths
4 fresh kaffir lime leaves or 1 tbsp grated lime zest
1/2 cup chili oil
salt and freshly ground pepper
1 cup fresh lime juice
2 tbsp chopped fresh cilantro leaves
4 fresh kaffir lime leaves or 1 tsp grated lime zest
Directions:
Preheat oven to 400F. Place bell peppers, onions, beets, potatoes, pumpkin, sweet potato, zucchini, garlic, lemongrass and 4 lime leaves in a large roasting pan.
Drizzle with chili oil and toss until all the vegetables are coated. Sprinkle liberally with salt and pepper. Bake, turning 2-3 times, until all vegetables are tender, 30-40 minutes.
Remove from oven and discard lime leaves and lemongrass. Arrange vegetables. Drizzle with lime juice and garnish with chopped cilantro and lime leaves. Accompany with bread and olive oil.
