South Asia Coconut Beef Curry


This recipe was taken from centuries old cooking techniques and when possible applied modern cooking methods and/or ingredients.  It uses Asian cooking styles, Asian Spices, Asian Sauces and Asian Ingredients.  The style of cooking may have a slight alteration while still maintaining the dish's overall purpose.  In this blog we touch on recipes that may be predominant for the Chinese Cuisines.  We will also share recipes based upon country, or regions such as: Burma, Cambodia, Indian, Indonesia, Japan, Korea, Laos, Malaysia, Nepal, Philippines, Singapore, Sri Lanka, Taiwan, Thailand, Tibet and Vietnam.  Some cuisines are considered South Asian, South East Asian, Central Asian and/or Middle Eastern and may not be strictly connected to a specific country or culture.



Recipe makes for 4 Servings

1 tbsp vegetable oil

1 tbsp sesame oil

1 onion, chopped

1 tbsp peeled and grated fresh ginger

5 cloves garlic, finely chopped

1 tbsp ground turmeric

1 tsp chili powder

1 lb lean beef, cut into 1-inch cubes

1 stalk lemongrass, white part only, bruised

1 cup water

1 cup coconut milk

6 oz. green beans, trimmed and halved crosswise

2 tbsp chopped fresh cilantro


Directions:


In a wok or large skillet, heat oils over medium heat and fry onion, ginger, garlic until fragrant, about 1 minute. 

Add turmeric and chili powder and fry for 30 seconds. Add beef and cook until beef changes color, 3-4 minutes. 

Add lemongrass, water and coconut milk. Bring to a boil, reduce heat to low and simmer until beef is tender, 10-15 minutes. Add beans and cook for 3 minutes.


Remove heat and stir in cilantro. Spoon into serving bowls and serve with rice.
