How to Make Chinese Pork in Spicy Caramel Sauce Asian Cooking Recipe Cuisine

China Pork in Spicy Caramel Sauce


This recipe was taken from centuries old cooking techniques and when possible applied modern cooking methods and/or ingredients.  It uses Asian cooking styles, Asian Spices, Asian Sauces and Asian Ingredients.  The style of cooking may have a slight alteration while still maintaining the dish's overall purpose.  In this blog we touch on recipes that may be predominant for the Chinese Cuisines.  We will also share recipes based upon country, or regions such as: Burma, Cambodia, Indian, Indonesia, Japan, Korea, Laos, Malaysia, Nepal, Philippines, Singapore, Sri Lanka, Taiwan, Thailand, Tibet and Vietnam.  Some cuisines are considered South Asian, South East Asian, Central Asian and/or Middle Eastern and may not be strictly connected to a specific country or culture.



Recipe makes for 4 Servings

1 1/2 lb pork for stewing

1 2/3 cups chicken stock

3 chile pepper (red Fresnos and jalapeƱos)

1 pc. 3/4-inch ginger

3 tbsp brown sugar

1/4 cup oil

1 tbsp fish sauce

2 tbsp lime juice


Directions:


Add pork, chicken stock and 2 cups of water to a pot and bring to a boil. Cover and simmer over low heat for 1.5 to 2 hours. Meat should be tender; if not, cook a little longer. Let cool in the liquid.

Remove the pork and reserve the liquid. Slice the pork thinly and then cut it into steps. Rinse chiles, discard stems and cut the rest into strips. Peel ginger, cut into paper-thin slices, the into strips.

In a small pan, heat brown sugar and 1/2 cup of reserved cooking liquid until sugar dissolved. Add chiles and ginger and simmer briefly.


Heat oil in a wok or pan and fry meat strips in batches until browned, then remove. After the last batch, return to the wok and add the brown sugar sauce. Season to taste with fish sauce, lime juice and salt; bring to a boil. Serve with hot cooked sauce.
