How to Make Taiwanese Dan-Z Noodle Asian Cooking Recipe Cuisine
Taiwan Dan-Z Noodle
This recipe was taken from centuries old cooking techniques and when possible applied modern cooking methods and/or ingredients. It uses Asian cooking styles, Asian Spices, Asian Sauces and Asian Ingredients. The style of cooking may have a slight alteration while still maintaining the dish's overall purpose. In this blog we touch on recipes that may be predominant for the Chinese Cuisines. We will also share recipes based upon country, or regions such as: Burma, Cambodia, Indian, Indonesia, Japan, Korea, Laos, Malaysia, Nepal, Philippines, Singapore, Sri Lanka, Taiwan, Thailand, Tibet and Vietnam. Some cuisines are considered South Asian, South East Asian, Central Asian and/or Middle Eastern and may not be strictly connected to a specific country or culture.
Recipe makes for 10 Servings
1 cup shallot, minced
3 green onions, chopped
2 lb ground pork
2 tsp sugar
1 cup soy sauce
2 tbsp rice wine
1 chicken bouillon cube
8 portions Taiwanese oil noodles
Chinese parsley
SOUP:
2.5 lb pork bones
20 cups water
50 shrimp
Directions:
Prepare soup stock: Boil pork bones in water and cook down until the soup is reduced by about a quarter.
Add shrimp and cook for 2 minutes. Remove shrimp and peel. Put aside.
Cook shrimp shells in the soup for 30 minutes. Remove the shells.
Make the pork sauce: Heat oil in a wok. Stir-fry the minced shallot and green onion in the oil for about 3 minutes or until fragrant.
Add the pork and stir-fry until it turns white.
Add sugar and soy sauce and continue stir-frying until you create an aroma.
Add wine and bring to a boil. Add 2 cups stock. Cook for about 2 hours over low heat. (You can add bouillon here for more flavor)
Cook noodles in boiling water around 1 minute till done. Drain noodles and place in a bowl. Add 1 cup of stock. Pour 3 tbsp sauce on top. Decorate with shrimp and some Chinese parsley.
Serve with brown vinegar, white pepper and smashed garlic to taste.
