How to Make Lao Fried Catfish - Pa Ling Sousi Haeng Asian Cooking Recipe Cuisine

Laos Pa Ling Sousi Haeng (Fried Catfish)


This recipe was taken from centuries old cooking techniques and when possible applied modern cooking methods and/or ingredients.  It uses Asian cooking styles, Asian Spices, Asian Sauces and Asian Ingredients.  The style of cooking may have a slight alteration while still maintaining the dish's overall purpose.  In this blog we touch on recipes that may be predominant for the Chinese Cuisines.  We will also share recipes based upon country, or regions such as: Burma, Cambodia, Indian, Indonesia, Japan, Korea, Laos, Malaysia, Nepal, Philippines, Singapore, Sri Lanka, Taiwan, Thailand, Tibet and Vietnam.  Some cuisines are considered South Asian, South East Asian, Central Asian and/or Middle Eastern and may not be strictly connected to a specific country or culture.



Recipe makes for 2-4 Servings

6 catfish fillets

5 dried red chili peppers, deseeded, deveined and soaked in water

7 shallots, peeled

1 coconut's worth of coconut meat, grated and 2 milk extractions

chopped spring onion leaves

kaffir lime leaves

salt

fish sauce

ground black pepper

beef or chicken stock


Directions:


Cut fish about 1 cm thick, wash and add salt. Fry in a little oil until  golden and set aside.

Put the first extraction of the coconut milk in a wok and leave until the cream separates. Add the chili peppers and simmer until the ingredients give off a good aroma. Add the stock and leave over a low fire until liquid has reduced.

Add the fish sauce and a considerable quantity of the second milk extraction. Add the fish slices so they absorb the liquid. Add the lime leave and spring onion leaves. 

Transfer to a pan and garnish with ground black pepper


*The dish should not have much liquid or juice, only about enough to keep the slices of fish moist.
