How to Make Japanese Ramen and Roast Duck Soup Asian Cooking Recipe Cuisine
Japan Ramen and Roast Duck Soup
This recipe was taken from centuries old cooking techniques and when possible applied modern cooking methods and/or ingredients. It uses Asian cooking styles, Asian Spices, Asian Sauces and Asian Ingredients. The style of cooking may have a slight alteration while still maintaining the dish's overall purpose. In this blog we touch on recipes that may be predominant for the Chinese Cuisines. We will also share recipes based upon country, or regions such as: Burma, Cambodia, Indian, Indonesia, Japan, Korea, Laos, Malaysia, Nepal, Philippines, Singapore, Sri Lanka, Taiwan, Thailand, Tibet and Vietnam. Some cuisines are considered South Asian, South East Asian, Central Asian and/or Middle Eastern and may not be strictly connected to a specific country or culture.
Recipe makes for 4 Servings
6 1/2 oz ramen noodles
2 cups chicken stock
3 cups water
5 thin slices fresh ginger
4 small red chilies, seeded and halved
2 tsp lime juice
3 lemongrass stalks, bruised
3 fresh cilantro roots, bruised
1 roasted duck, meat removed and chopped
4 spring onions, chopped
1/2 cup fresh bean sprouts, rinsed
1/4 cup bean sprouts, rinsed
1/4 cup chopped fresh cilantro
Directions:
Cook noodles as directed in the packaging. Drain and set aside. In a saucepan, combine stock, water, ginger, 4 chili halves and lime juice.
Bring to a boil, reduce heat to low, cover and simmer, stirring occasionally, until flavors are blended, about 5 minutes.
Add lemongrass and cilantro roots. Simmer, stirring occasionally for 15 minutes. Strain through fine-mesh sieve. Return stock to saucepan.
Add duck meat, spring onions and noodles to stock and simmer until heat through, about 5 minutes.
Ladle into individual bowls. To each serving with bean sprouts, fresh cilantro and remaining chili halves.
