Thailand Grilled Garlic Pepper Jumbo Shrimp
This recipe was taken from centuries old cooking techniques and when possible applied modern cooking methods and/or ingredients. It uses Asian cooking styles, Asian Spices, Asian Sauces and Asian Ingredients. The style of cooking may have a slight alteration while still maintaining the dish's overall purpose. Recipe makes for 3 Servings
6 jumbo shrimp or prawns
2 tbsp melted butter
SAUCE:
2 tbsp oil
6 cloves garlic, finely chopped
2 tbsp oyster sauce
1 tbsp light soy sauce
1/2 tsp black pepper
2 tbsp sugar
1 tbsp fish sauce
Directions:
Place oil in a wok or skillet and place over medium heat. Add the garlic and fry until lightly brown and crisp. Drain off the oil.
In the same wok with the fried garlic, add the oyster sauce, soy sauce, black pepper, sugar and fish sauce. Bring to a boil and cook a few minutes or unit the sauce becomes slightly thickened. Remove from the heat and let cool.
Grill over medium heat and baste with butter. After about 4-5 minutes, move the shrimp to a higher heat and baste with the sauce. Let it caramelize for 2-3 minutes.
