Vietnam Baked Cinnamon Meat Loaf


This recipe was taken from centuries old cooking techniques and when possible applied modern cooking methods and/or ingredients.  It uses Asian cooking styles, Asian Spices, Asian Sauces and Asian Ingredients.  The style of cooking may have a slight alteration while still maintaining the dish's overall purpose.  In this blog we touch on recipes that may be predominant for the Chinese Cuisines.  We will also share recipes based upon country, or regions such as: Burma, Cambodia, Indian, Indonesia, Japan, Korea, Laos, Malaysia, Nepal, Philippines, Singapore, Sri Lanka, Taiwan, Thailand, Tibet and Vietnam.  Some cuisines are considered South Asian, South East Asian, Central Asian and/or Middle Eastern and may not be strictly connected to a specific country or culture.



Recipe makes for 4-6 Servings

2 tbsp fish sauce

1 1/2 tbsp ground cinnamon

2 tsp sugar

1 tsp ground black pepper

1 tbsp potato starch

1 lb lean ground pork

1 oz pork fat, very finely chopped

2-3 shallots,  very finely chopped

oil for greasing

red chili strips

chili oil


Directions:


In a large bowl, mix together fish sauce, cinnamon, sugar and pepper. Beat in the potato starch.

Add the ground pork, the chopped pork fat and shallots to the bowl and mix thoroughly. Cover and put in the refrigerator for 3-4 hours.

Preheat the oven to 350 degrees F. Lightly oil a baking pan and spread the pork mixture in it. It should feel springy from the potato starch.

Cover with foil and bake in the oven for 35-40 minutes. If you want the top to turn brown and crunchy, remove the foil for the last 10 minutes.

Turn the meat loaf out on to a board and slice into stirs. Drizzle with chili oils and serve hot. 


*For leftovers, you can fry until crisp and brown and serve with bread and fried eggs.
