How to Make Thai Duck and Pineapple Curry Asian Cooking Recipe Cuisine


This recipe was taken from centuries old cooking techniques and when possible applied modern cooking methods and/or ingredients.  It uses Asian cooking styles, Asian Spices, Asian Sauces and Asian Ingredients.  The style of cooking may have a slight alteration while still maintaining the dish's overall purpose.  In this blog we touch on recipes that may be predominant for the Chinese Cuisines.  We will also share recipes based upon country, or regions such as: Burma, Cambodia, Indian, Indonesia, Japan, Korea, Laos, Malaysia, Nepal, Philippines, Singapore, Sri Lanka, Taiwan, Thailand, Tibet and Vietnam.  Some cuisines are considered South Asian, South East Asian, Central Asian and/or Middle Eastern and may not be strictly connected to a specific country or culture.



Recipe makes for 4-6 Servings

1 tbsp peanut oil

8 spring onions, sliced diagonal into 1 inch lengths

2 cloves garlic, crushed

2-4 tablespoons red curry paste

1 1/2 lb roast duck, chopped

1 1/2 cups coconut milk

14 oz can pineapple pieces in syrup, drained

3 fresh kaffir lime leaves

3 tbsp chopped fresh coriander

2 tbsp chopped fresh mint

Directions:


Heat a wok until very hot, add the oil and swirl. Add the spring onion, garlic and red curry paste, and stir-fry for 1 minute or until fragrant.

Add the duck pieces, coconut milk, pineapple pieces, kaffir lime leaves and half the fresh coriander and mint. Bring to a boil then reduce the heat and simmer for 10 minutes or until the duck is heated through and the sauce has thickened slightly.


Stir in the remaining fresh coriander and mint and serve with jasmine rice.
