Thailand Salmon with Sweet Pepper Sauce
This recipe was taken from centuries old cooking techniques and when possible applied modern cooking methods and/or ingredients. It uses Asian cooking styles, Asian Spices, Asian Sauces and Asian Ingredients. The style of cooking may have a slight alteration while still maintaining the dish's overall purpose. In this blog we touch on recipes that may be predominant for the Chinese Cuisines. Recipe makes for 4 Servings
3 tbsp vegetable oil
1 small red chili, seeded and chopped
2 cloves garlic, crushed
1 red bell pepper, seeded and diced
2 tbsp palm or brown sugar
1 tbsp rice vinegar
1 tbsp soy sauce
1 cup water
2 tsp cornstarch combined with 1 tbsp water
2 tsp lemon juice
6.5 oz egg noodles
3 tsp Asian sesame oil
1 tbsp lime juice
2 tbsp chopped fresh cilantro
4 salmon fillets, about 6.5 oz each
Directions:
In a wok or frying pan over medium-high heat, warm 1 tbsp vegetable oil. Add chili, garlic and bell pepper and cook, stirring occasionally until bell pepper is softened, about 3 minutes.
Stir in sugar, vinegar, soy sauce and water. Reduce heat to low and simmer until flavors are blended, about 5 mites. Stir in cornstarch and water.
Continue to stir, bring sauce to a boil and cook until thickened, 2-3 minutes. Remove from heat and stir in lemon juice.
Cook noodles. Drain in a small bowl, combine sesame oil, lime juice and cilantro. Mix well. Pour over noodles and toss to coat.
In a frying pan over medium-high heat, warm remaining 2 tbsp vegetable oil. Add salmon fillets and cook until fish flakes easily when tested with a fork, 2-3 minutes on each side.
To serve, make sure sweet pepper sauce is warm. Arrange noodles and salmon fillets on individual plates. Spoon sauce on top and serve immediately.
