Thailand Red Beef Curry with Thai Eggplant


This recipe was taken from centuries old cooking techniques and when possible applied modern cooking methods and/or ingredients.  It uses Asian cooking styles, Asian Spices, Asian Sauces and Asian Ingredients.  The style of cooking may have a slight alteration while still maintaining the dish's overall purpose.  In this blog we touch on recipes that may be predominant for the Chinese Cuisines.  We will also share recipes based upon country, or regions such as: Burma, Cambodia, Indian, Indonesia, Japan, Korea, Laos, Malaysia, Nepal, Philippines, Singapore, Sri Lanka, Taiwan, Thailand, Tibet and Vietnam.  Some cuisines are considered South Asian, South East Asian, Central Asian and/or Middle Eastern and may not be strictly connected to a specific country or culture.



Recipe makes for 4 Servings

9 oz can of coconut cream

1 tbsp Thai red curry paste

1 lb round or topside steak, cut into strips

2 tbsp fish sauce

1 tbsp grated palm sugar

5 fresh kaffir lime leaves

2 cups coconut milk

8 Thai eggplants, halved

2 tbsp finely shredded fresh Thai basil


Directions:


Scoop the thick coconut cream from the top of the can (make sure not to shake it beforehand) - you should have about 1/2 cup. Put thick cream in a wok and bring to a boil, then simmer for 10 minutes or until the oil starts to separate from the cream.

Add the curry paste and simmer, stirring regularly, for 5 minutes or until fragrant.

Add the meat and cook, stirring, for 3-5 minutes or until it changes color. Stir in the fish sauce, palm sugar, lime leaves, coconut milk and remaining coconut cream, and simmer for 1 hour or until the meat is tender and the sauce slightly thickened.


Add the eggplant and cook for 10 minutes, or until tender. If the sauce is too thick, add a little water. Stir in half the basil garnish with the remainder and serve with rice.
