Sri Lanka Fish Bites with Coconut Sambal
This recipe was taken from centuries old cooking techniques and when possible applied modern cooking methods and/or ingredients. It uses Asian cooking styles, Asian Spices, Asian Sauces and Asian Ingredients. The style of cooking may have a slight alteration while still maintaining the dish's overall purpose. Recipe makes for 4 Servings
12 oz firm white boneless, skinless fish fillets
1 1/2 tsp ground turmeric
1 tsp sea salt
2 tsp cornstarch
1/4 tsp ground chili powder
2 tbsp vegetable oil
2 cups steamed rice
2 tbsp chopped fresh cilantro leaves
garlic chives, for garnish
SAMBAL:
1/3 cup unsweetened desiccated shredded coconut
3 tbsp boiling water
1/2 tsp shrimp paste
1 fresh kaffir lime leaf, finely shredded
1/4 onion, finely chopped
2 tsp lemon juice
Directions:
Cut fish into 3/4-inch by 2 1/2-inch lengths. In a bowl, combine turmeric, salt, cornstarch and chili powder and mix well. Rub spice mixture into fish pieces.
Preheat a grill pan or barbecue, then brush grill with oil. Grill fish pieces until fish is firm, 1-2 minutes each side. Remove from grill. Combine cooked rice with cilantro. Serve fish bites with rice and coconut samba. Garnish with garlic chives.
SAMBAL: Place coconut in a heatproof bowl, pour in boiling water and mix well. Add shrimp paste, kaffir lime leaf, onion and lemon juice. Cover and refrigerate until serving.
