Thailand Spicy Basil Noodles
This recipe was taken from centuries old cooking techniques and when possible applied modern cooking methods and/or ingredients. It uses Asian cooking styles, Asian Spices, Asian Sauces and Asian Ingredients. The style of cooking may have a slight alteration while still maintaining the dish's overall purpose. Recipe makes for 2 Servings
7 oz flat rice noodles
1 oz broccoli florets
1 oz snow peas
1/2 oz haricot string beans
1/4 oz Thai basil leaves
2 tbsp onion, finely chopped
1 3/4 tbsp garlic, minced
1 tsp green peppercorns
4 stems bok choy
1 oz straw mushroom
4 tsp vegetable stock
4 tsp oyster sauce
sugar, to taste
1/2 tbsp soy sauce
Directions:
Soak rice noodles in warm water for 10-15 minutes. Blanch broccoli florets, snow peas and haricot beans in hot boiling water.
Deep-fry hot basil leaves and drain on a kitchen towel. Heat a little oil in a wok. Add onion and garlic and sauté until onions are translucent.
Add green peppercorns and sauté for 30 seconds. Add all the vegetables and vegetable stock and cook for several minutes until vegetables are done.
Finally, add soaked noodles, oyster sauce and sugar. Mix thoroughly. Serve hot, drizzled with soy sauce and garnished with fried basil leaves.
