How to Make Indian Vegetable Peanut Noodles Asian Cooking Recipe Cuisine
India Vegetable Peanut Noodles
This recipe was taken from centuries old cooking techniques and when possible applied modern cooking methods and/or ingredients. It uses Asian cooking styles, Asian Spices, Asian Sauces and Asian Ingredients. The style of cooking may have a slight alteration while still maintaining the dish's overall purpose. In this blog we touch on recipes that may be predominant for the Chinese Cuisines. Some cuisines are considered South Asian, South East Asian, Central Asian and/or Middle Eastern and may not be strictly connected to a specific country or culture.
Recipe makes for 2 Servings
4 cups thin rice noodles
3 tbsp sesame oil
3-4 garlic cloves, chopped
2 small carrots, julienned
1 red bell pepper, thinly sliced
1 stalk celery, thinly sliced on the bias
1 small red onion, thinly sliced
2 in piece ginger, julienned
2 tsp black pepper
2 tsp salt
4 tbsp rice wine vinegar
zest and juice from 1 orange
2 tbsp ketchup manis
1 tsp Szechuan peppercorns, ground
2 tbsp sambal olek
2 tbsp peanut butter
2 cups spinach leaves, sliced
1 cup cabbage, sliced
2 tbsp cilantro
2 tbsp toasted and chopped peanuts
Directions:
Pour boiling water over the noodles and let them soak for 3-4 minutes. Drain and set aside.
In a large wok or sauté pan, heat up the sesame oil and add the garlic. Almost immediately, add the julienned carrots and cook for 4-5 minutes, frequently stirring.
Add the red bell peppers and cook for another minute. Turn up heat and cook, stirring on high for 2-3 minutes or until sauce around the vegetables is bubbly.
Add the noodles, spinach, cabbage, cilantro and peanuts. Toss to mix, turn the heat off and serve immediately.
