Japan Teriyaki Beef and Soy Bean Stir Fry


This recipe was taken from centuries old cooking techniques and when possible applied modern cooking methods and/or ingredients.  It uses Asian cooking styles, Asian Spices, Asian Sauces and Asian Ingredients.  The style of cooking may have a slight alteration while still maintaining the dish's overall purpose.  In this blog we touch on recipes that may be predominant for the Chinese Cuisines.  We will also share recipes based upon country, or regions such as: Burma, Cambodia, Indian, Indonesia, Japan, Korea, Laos, Malaysia, Nepal, Philippines, Singapore, Sri Lanka, Taiwan, Thailand, Tibet and Vietnam.  Some cuisines are considered South Asian, South East Asian, Central Asian and/or Middle Eastern and may not be strictly connected to a specific country or culture.



Recipe makes for 4 Servings

1 tbsp mirin

2 tbsp sake

2 tbsp soy sauce

2 tsp sugar

13 oz soy beans (fresh or frozen)

1 tbsp peanut oil

alb 7oz lean beef fillet, thinly sliced across the grain

6 spring onions, thinly sliced

2 cloves garlic, chopped

2 tsp finely chopped fresh ginger

2 oz soy bean sprouts, tailed

1 red pepper, thinly sliced


Directions:


To make stir fry sauce, combine the miring, sake, soy sauce and sugar in a small bowl or jug and set aside until needed.

Cook the soy beans in a saucepan of boiling water for 2 minutes. Drain.

Heat a large wok over high heat. Add 2 tsp of the peanut oil and swirl it around to coat the side of the wok. Cook the beef in 3 batches for 3-4 minutes per batch or until well browned.

Remove from the wok. Add the spring onion and stir fry for 30 seconds or until it has wilted. 

Return the beef to the wok, add the garlic, ginger, soy beans, soy bean sprouts and pepper and stir-fry for 2 minutes. Add the stir-fry sauce to the wok and stir-fry until heated through. Serve hot with steamed rice.


*This recipe uses the shelled variety of soy beans.
