How to Make Japanese Green Beans with Lemon Miso Asian Cooking Recipe Cuisine

Japan Green Beans with Lemon Miso


This recipe was taken from centuries old cooking techniques and when possible applied modern cooking methods and/or ingredients.  It uses Asian cooking styles, Asian Spices, Asian Sauces and Asian Ingredients.  The style of cooking may have a slight alteration while still maintaining the dish's overall purpose.  In this blog we touch on recipes that may be predominant for the Chinese Cuisines.  We will also share recipes based upon country, or regions such as: Burma, Cambodia, Indian, Indonesia, Japan, Korea, Laos, Malaysia, Nepal, Philippines, Singapore, Sri Lanka, Taiwan, Thailand, Tibet and Vietnam.  Some cuisines are considered South Asian, South East Asian, Central Asian and/or Middle Eastern and may not be strictly connected to a specific country or culture.



Recipe makes for 4 Servings

2 tbsp white miso

2 tbsp mirin or sweet white wine

1/2 tsp hot mustard

1/2 tsp grated lemon zest

8 oz green beans, trimmed and halved

2 scallions, green parts only, diagonally sliced in 3/4-inch lengths


Directions:


In a small bowl, combine miso, miring, mustard and lemon zest and mix well. Bring a medium saucepan of water to a boil, add green beans and simmer until just cooked but still crispy, 3-4 minutes.


If serving cold, immediately plunge beans into cold water to prevent further cooking. Toss beans with miso mixture and mix well to combine. Serve hot or cold, garnished with scallions.
