South East Asia Crispy Fish with Hot Sour Chili Sauce


This recipe was taken from centuries old cooking techniques and when possible applied modern cooking methods and/or ingredients.  It uses Asian cooking styles, Asian Spices, Asian Sauces and Asian Ingredients.  The style of cooking may have a slight alteration while still maintaining the dish's overall purpose.  In this blog we touch on recipes that may be predominant for the Chinese Cuisines.  We will also share recipes based upon country, or regions such as: Burma, Cambodia, Indian, Indonesia, Japan, Korea, Laos, Malaysia, Nepal, Philippines, Singapore, Sri Lanka, Taiwan, Thailand, Tibet and Vietnam.  Some cuisines are considered South Asian, South East Asian, Central Asian and/or Middle Eastern and may not be strictly connected to a specific country or culture.



Recipe makes for 4 Servings

1 tbsp vegetable oil

3 red chilies, seeded and chopped

2 cloves garlic, chopped

2 tbsp chopped fresh cilantro leaves

2 tbsp oyster sauce

1 tbsp fish sauce

1 tbsp sweet chili sauce

2 tbsp lime juice

1/2 cup fish stock or water

2 tbsp chopped fresh basil

4 small whole fish, scaled and cleaned

coarse salt

oil, for deep frying


Directions:


In a saucepan over medium heat, heat oil. Add chilies, garlic and cilantro and cook until fragrant, about 1 minute. 

Pour in sauces, juice and stock and bring to a boil, stirring constantly. Cook until sauce thickens, about 4 minutes. Stir in basil.

With a sharp knife, make 2-3 deep diagonal cuts on each side of the fish. Rub generously with salt. 

In a large saucepan over medium heat, heat oil until hot. Immerse fish and cook until golden and crisp, about 10 minutes. Drain on paper towels. Serve with rice and the sauce.

*Make sure oil is hot enough to make fish sizzle the minute it hits the oil. This will seal the surface of the fish and trap in moisture.
