South Asia Cumin-flavored Potatoes


This recipe was taken from centuries old cooking techniques and when possible applied modern cooking methods and/or ingredients.  It uses Asian cooking styles, Asian Spices, Asian Sauces and Asian Ingredients.  The style of cooking may have a slight alteration while still maintaining the dish's overall purpose.  In this blog we touch on recipes that may be predominant for the Chinese Cuisines.  We will also share recipes based upon country, or regions such as: Burma, Cambodia, Indian, Indonesia, Japan, Korea, Laos, Malaysia, Nepal, Philippines, Singapore, Sri Lanka, Taiwan, Thailand, Tibet and Vietnam.  Some cuisines are considered South Asian, South East Asian, Central Asian and/or Middle Eastern and may not be strictly connected to a specific country or culture.



Recipe makes for 4-5 Servings

2 lb uniformly sized potatoes, about 7medium

salt as needed

2 1/2 tbsp cold water

1 tsp ground turmeric

1/2 tsp chili powder

1/4 cup vegetable oil and melted unsalted butter combined

4 tsp cumin seeds

4 tsp ground coriander

2 tsp finely grated fresh ginger

1/3 cup chopped fresh cilantro

juice of 1/2 lemon

Directions:


Place potatoes and large pinch salt in a saucepan with enough cold water to cover. Bring to a boil over medium-high heat. Reduce heat to medium-low and cook, partially covered, until potatoes are tender, about 20 minutes. Drain potatoes and let cool for 15 minutes. Peel potatoes and cut into 1 1/2-inch cubes. Set aside.

In a small bowl, combine cold water, turmeric and chili powder and set aside. 

In a large heavy saucepan, heat oil and butter mixture over medium-low heat. Add cumin seeds and cook, stirring, until fragrant, about 30 seconds; take care not to burn seeds.

Reduce heat to low and add water and turmeric mixture. Cook stirring, for 30 seconds. Add potatoes and salt to taste and toss gently until heated through, about 1 minute.


Add coriander and toss for 30 seconds. Add ginger and cilantro and toss to combine. Drizzle with lemon juice and serve.
