Vietnam Charcoal-Grilled Beef with Shrimp Sauce


This recipe was taken from centuries old cooking techniques and when possible applied modern cooking methods and/or ingredients.  It uses Asian cooking styles, Asian Spices, Asian Sauces and Asian Ingredients.  The style of cooking may have a slight alteration while still maintaining the dish's overall purpose.  In this blog we touch on recipes that may be predominant for the Chinese Cuisines.  We will also share recipes based upon country, or regions such as: Burma, Cambodia, Indian, Indonesia, Japan, Korea, Laos, Malaysia, Nepal, Philippines, Singapore, Sri Lanka, Taiwan, Thailand, Tibet and Vietnam.  Some cuisines are considered South Asian, South East Asian, Central Asian and/or Middle Eastern and may not be strictly connected to a specific country or culture.



Recipe makes for 4 Servings

1 lb sirloin, cut across the grain into strips

24 skewers

lettuce leaves

1 small bunch fresh coriander

Shrimp sauce

MARINADE:

2 lemon grass stalks, trimmed and chopped

2 shallots, chopped

2 garlic cloves, peeled and chopped

1 red Thai chili, seeded and chopped

2 tsp sugar

2 tbsp fish sauce

1 tbsp soy sauce

1 tbsp peanut oil


Directions:


For the marinade, pound the lemon grass, shallots, garlic and chili with the sugar using a mortar and pestle, until it forms a paste.

Beat in the fish paste, soy sauce and peanut oil. Toss the beef in the marinade, cover and marinate for 1-2 hours. 

Prepare the charcoal grill or preheat a conventional grill. Thread the beef on to the skewers and place them over the charcoal. Cook for not much more than a minute on each side.

Wrap the beef in the lettuce leaves, garnish with coriander and serve with the shrimp sauce for dipping. 


*If you're using wooden skewers soak them before grilling.
