How to Make Thai Chili Squid Salad Asian Cooking Recipe Cuisine

Thailand Chili Squid Salad


This recipe was taken from centuries old cooking techniques and when possible applied modern cooking methods and/or ingredients.  It uses Asian cooking styles, Asian Spices, Asian Sauces and Asian Ingredients.  The style of cooking may have a slight alteration while still maintaining the dish's overall purpose.  In this blog we touch on recipes that may be predominant for the Chinese Cuisines.  We will also share recipes based upon country, or regions such as: Burma, Cambodia, Indian, Indonesia, Japan, Korea, Laos, Malaysia, Nepal, Philippines, Singapore, Sri Lanka, Taiwan, Thailand, Tibet and Vietnam.  Some cuisines are considered South Asian, South East Asian, Central Asian and/or Middle Eastern and may not be strictly connected to a specific country or culture.



Recipe makes for 4 Servings

8 oz rice stick noodles

4 squid bodies, about 12 oz.

2 cups fish stock

1/2 cup dry white wine

1 onion, cut into eighths

4 tomatoes, chopped

1/4 cup chopped fresh cilantro

1/4 cup chopped fresh mint

1/4 cup chopped shallots

1-2 small red chilies, seeded, if desired and halved

3 cloves garlic

1 tsp Tabasco sauce

1/4 cup fish sauce

5 tbsp lime juice


Directions:


Cook noodles as directed on package. Drain and allow to cool.

Cut squid in half lengthwise. Cut shallow slashed in crisscross pattern on inside of squid. Then cut into strips 3/4 inch wide. 

Place stock and wine in saucepan. Bring to a boil, reduce heat to low, add squid and cook until tender, 1-2 minutes. Do not overcook or squid will become tough. Drain and allow to cool.

In a large bowl, combine noodles, squid, onion, tomatoes, cilantro, mint and scallions.

To make dressing, in a food processor, combine chilies to taste, garlic, Tabasco sauce, fish sauce and lime juice. Process until smooth. Set aside until 1 hour before serving.


Add dressing to salad, toss, cover and refrigerate for 1 hour before serving. Divide chilled salad among individual plates.
