How to Make Vietnamese Banh Mi Tom Chien - Shrimp Toast Asian Cooking Recipe Cuisine

Vietnam Banh Mi Tom Chien (Shrimp Toast)


This recipe was taken from centuries old cooking techniques and when possible applied modern cooking methods and/or ingredients.  It uses Asian cooking styles, Asian Spices, Asian Sauces and Asian Ingredients.  The style of cooking may have a slight alteration while still maintaining the dish's overall purpose.  In this blog we touch on recipes that may be predominant for the Chinese Cuisines.  We will also share recipes based upon country, or regions such as: Burma, Cambodia, Indian, Indonesia, Japan, Korea, Laos, Malaysia, Nepal, Philippines, Singapore, Sri Lanka, Taiwan, Thailand, Tibet and Vietnam.  Some cuisines are considered South Asian, South East Asian dishes, Central Asian and/or Middle Eastern and may not be strictly connected to a specific country or culture.



Recipe makes for 10-12 Servings


Salt

1 pound unpeeled medium shrimp

2 1/2 tbsp fish sauce

1 egg white

3 green onions, finely chopped

2 cloves garlic, minced

1 1/2 tbsp sugar

1 tsp ground black pepper

10 4x5-inch slices of white bread

oil, for frying and brushing



Directions:


Fill a large bowl with water and stir in 1/2 tsp salt. Rinse shrimp and do 3-4 times until shrimp is sufficiently cleaned. Peel and devein shrimp and let dry.

Mix fish sauce, egg white, green onions, garlic, sugar and pepper together. Add shrimp and mix. Marinate for at least 30 minutes or up to 12 hours.

Preheat oven to 200F. Trim crusts from bread and each slice into 6 equal rectangles. Toast for 10 minutes, until they’re dry and crisp.

Take shrimp mixture and process to a thick, coarse paste. Spread 1 tsp of this paste on each piece of toast. Lightly brush with oil.

Heat oil in a deep saucepan or Dutch oven until it reaches 350F.

Reduce heat to medium-high. Lower toasts into the oil, shrimp side down. Turn occasionally to cook evenly until shrimp is orangey-pink and toast is golden brown. (1-2 minutes) Drain on paper towels.
