How to Make Chinese Loh Mai Kai – Glutinous Rice with Chicken Asian Cooking Recipe Cuisine
China Glutinous Rice with Chicken (Loh Mai Kai)
This recipe was taken from centuries old cooking techniques and when possible applied modern cooking methods and/or ingredients. It uses Asian cooking styles, Asian Spices, Asian Sauces and Asian Ingredients. The style of cooking may have a slight alteration while still maintaining the dish's overall purpose. Recipe makes for 4 Servings
2 cups uncooked glutinous rice, soaked overnight
½ cup dried black Chinese mushrooms, soaked in warm water
1 fresh chicken, skinned and debones
1 tbsp oyster sauce
1 tsp dark soy sauce
2 tbsp oil
2 shallots, sliced
1 tbsp dried prawns softened in water
2 cups water
½ tsp salts
Directions:
Drain rice and mushrooms and set aside to dry. Cut the chicken to strips.
Marinate the chicken and mushrooms with the oyster and dark soy sauce for at least 2 hours.
Remove the mushrooms from the marinade. Fry dried prawns and mushrooms for about 2 minutes until fragrant.
Add the chicken and stir fry lightly until no longer pink. Add the drained rice and toss in the wok with the other ingredients until thoroughly mixed.
Transfer rice to a heat-proof casserole and add water and salt. Stir-fry shallot in an oiled wok. Remove the fried shallots and sprinkle over the top of the rice.
Place casserole in a steamer and steam until soft or for about 1 hour.
