How to Make Thai Kao Tom Moo - Pork and Shrimp Rice Soup Asian Cooking Recipe Cuisine

Thailand Kao Tom Moo (Pork and Shrimp Rice Soup)


This recipe was taken from centuries old cooking techniques and when possible applied modern cooking methods and/or ingredients.  It uses Asian cooking styles, Asian Spices, Asian Sauces and Asian Ingredients.  The style of cooking may have a slight alteration while still maintaining the dish's overall purpose.  In this blog we touch on recipes that may be predominant for the Chinese Cuisines.  We will also share recipes based upon country, or regions such as: Burma, Cambodia, Indian, Indonesia, Japan, Korea, Laos, Malaysia, Nepal, Philippines, Singapore, Sri Lanka, Taiwan, Thailand, Tibet and Vietnam.  Some cuisines are considered South Asian, South East Asian dishes, Central Asian and/or Middle Eastern and may not be strictly connected to a specific country or culture.



Recipe makes for 2-4 Servings


2 1/4 cups chicken stock

1 cup water

2 cups cooked rice, pref. long-grain

2 tbsp vegetable oil, divided

5 cloves garlic, chopped

2-inch piece of ginger, minced

4 oz. ground pork

1 cup spinach leaves, chopped

1 tbsp soy sauce

1 tsp salt

1 egg

1 tsp sesame oil

8 medium cooked shrimp

chopped green onions

chopped cilantro leaves

ground pepper



Directions:



Bring stock, water and rice to a boil over high heat. Reduce heat to medium and simmer.

Heat 1 tbsp oil over medium heat. Cook garlic and ginger until fragrant but not burnt! Get half to use for garnish and the other half to the soup.

In the same skillet heat remaining oil over medium-high heat. Add pork and cook until not pink. Stir pork into the soup. Simmer until rice grains have absorbed some of the stock and have expanded. Simmer for a few minutes to reduce or add water to reach desired consistency (not as thin as clear soup but thicker than congee)

- Stir in spinach, soy sauce and salt. Return to a boil and add the egg and sesame oil. Garnish with the ginger and garlic, shrimp, green onions and cilantro. Add pepper to taste.
