How to Make Vietnamese Banh Tom - Deep-Fried Sweet Potato Patties Asian Cooking Recipe Cuisine

Vietnam Deep-Fried Sweet Potato Patties (Banh Tom)


This recipe was taken from centuries old cooking techniques and when possible applied modern cooking methods and/or ingredients.  It uses Asian cooking styles, Asian Spices, Asian Sauces and Asian Ingredients.  The style of cooking may have a slight alteration while still maintaining the dish's overall purpose.  In this blog we touch on recipes that may be predominant for the Chinese Cuisines.  We will also share recipes based upon country, or regions such as: Burma, Cambodia, Indian, Indonesia, Japan, Korea, Laos, Malaysia, Nepal, Philippines, Singapore, Sri Lanka, Taiwan, Thailand, Tibet and Vietnam.  Some cuisines are considered South Asian, South East Asian dishes, Central Asian and/or Middle Eastern and may not be strictly connected to a specific country or culture.



Recipe makes for 4 Servings

1/2 cup all-purpose flour

1/2 cup rice flour

1 tsp baking powder

2 tsp sugar

1 in. fresh ginger, peeled and grated

2 spring onions, finely sliced

6 oz small fresh prawns, peeled and deveined

1 slim sweet potato, about 8oz peeled and cut into fine matchsticks

vegetable oil, for deep-frying

salt and ground black pepper

chopped fresh cilantro to garnish

lettuce leave and chili sauce to serve


Directions:


Sift the flour and baking powder into a bowl. Add the sugar and about 1/2 tsp each of salt and pepper. Gradually stir in 1 cup water, until thoroughly combined. Add the grated ginger and sliced spring onions and leave to stand for 30 minutes. Add extra ginger if you like a strong flavour.

Add the prawns and sweet potato to the batter and fold them in, making sure they re well-coated. Heat enough oil for deep-frying in a wok. Place a heaped tablespoon of the mixture on to a metal spatula. Lower into the oil, pushing it off the spatula so that it floats in the oil. 

Fry for 2-3 minutes, turning it over so that it is evenly browned. Drain on kitchen paper. Continue with the rest of the batter, making sure to fry in batches.


Arrange the patties on lettuce leaves, garnish with coriander and serve with dipping sauce.
