Thailand Spicy Sweet Pork Satays with Fiery Lime Chili Dip
This recipe was taken from centuries old cooking techniques and when possible applied modern cooking methods and/or ingredients. It uses Asian cooking styles, Asian Spices, Asian Sauces and Asian Ingredients. The style of cooking may have a slight alteration while still maintaining the dish's overall purpose. Recipe makes for 4 Servings
1 ½ lbs lean pork, sliced into thin 1x3 in. pieces
15 bamboo skewers, soaked in water 30 minutes before grilling or metal skewers
4 garlic cloves, coarsely chopped
2 tbsp finely chopped cilantro roots or stems
1 tbsp light brown sugar
1 tsp ground red pepper
½ tsp ground turmeric
1 tbsp oil
4 tbsp fish sauce
1 tbsp light soy sauce
½ cup coconut milk
DIP:
1 tbsp sugar
1 tbsp fish sauce
2 tbsp lime juice
1 tbsp light soy sauce
1 tsp chili flakes
1 tbsp fresh chopped cilantro
Directions:
Grind garlic, coriander roots and sugar to a paste in a mortar or food processor. Add red pepper and turmeric and continue to grind to a paste. Add oil, fish sauce, soy sauce and coconut milk one by one and mix well.
Combine marinade above and pork and let marinate in the refrigerator for about 1 hour. Thread pork into skewers.
Put remaining marinade in a small saucepan and simmer for a few minutes over medium heat. Set aside for basting.
Prepare grill with medium and low heat zones. Combine dipping sauce ingredients.
Oil the hot grate and place the meat over the medium heat and grill for about 7-10 minutes, turning frequently and basting regularly. Test for doneness and serve with dipping sauce.
