Japan Wafu Hamburger Steak with Daikon Radish (Japanese-Style Hamburgers)
This recipe was taken from centuries old cooking techniques and when possible applied modern cooking methods and/or ingredients. It uses Asian cooking styles, Asian Spices, Asian Sauces and Asian Ingredients. The style of cooking may have a slight alteration while still maintaining the dish's overall purpose. Recipe makes for 4 Servings
14 oz firm or medium-firm tofu
1/2 cup panko bread crumbs
1/4 cup milk
8 oz ground beef
2 green onions, white and green parts finely chopped
1-inch piece fresh ginger, peeled and minced
2 tsp Japanese soy sauce
freshly ground black pepper
2 tbsp vegetable oil
3 tbsp Japanese soy sauce
2 tbsp mirin
1 tbsp sugar
grated daikon radish
Directions:
Wrap the tofu in cheesecloth and squeeze out as much water as possible. You want the tofu crumbled.
Mix panko and milk together. Add crumbled tofu, beef, green onions, ginger, soy sauce, and pepper and mash everything together. Divide mixture into 4 balls and flatten to form patties about 1/2 inch thick and 4 inches in diameter. They will be very soft.
Heat oil over medium-high heat. Place patties in the skillet and cook until undersides are brown. Flip and cook until cooked through.
Meanwhile combine soy sauce, mirin, sugar in a small bowl.
When the burgers are done, reduce heat to low and add the soy sauce mixture to the burgers and simmer for 1 minute. Slide burgers into 4 individual plates and drizzle sauce and garnish with grated daikon.
