Thailand Mussels in Spice Coconut Milk Broth



This recipe was taken from centuries old cooking techniques and when possible applied modern cooking methods and/or ingredients.  It uses Asian cooking styles, Asian Spices, Asian Sauces and Asian Ingredients.  The style of cooking may have a slight alteration while still maintaining the dish's overall purpose.  In this blog we touch on recipes that may be predominant for the Chinese Cuisines.  We will also share recipes based upon country, or regions such as: Burma, Cambodia, Indian, Indonesia, Japan, Korea, Laos, Malaysia, Nepal, Philippines, Singapore, Sri Lanka, Taiwan, Thailand, Tibet and Vietnam.  Some cuisines are considered South Asian, South East Asian dishes, Central Asian and/or Middle Eastern and may not be strictly connected to a specific country or culture.



Recipe makes for 4 Servings


1 large yellow onion, sliced

3 cloves garlic

1 tsp ground coriander

1/4 tsp turmeric

2 small red chilies

1 stalk lemongrass, bottom 3 inches only, chopped

2 tbsp lemon juice

1 tbsp olive oil

2 cup fish stock

2 cups coconut milk

2 tsp fish sauce

4 lb mussels in their shells, scrubbed

2 inch piece fresh ginger, very finely slices lengthwise and julienned

1/2 cup fresh cilantro leaves


Directions:


In a food processor, combine onion, garlic, coriander, turmeric, chilies, lemongrass and lemon juice. Process mixture to a fine paste, 2-3 minutes.

In a very large saucepan, with a lid, heat oil over medium heat and add paste. Cook, stirring, until fragrant, about 5 minutes. Add fish stock, coconut milk and fish sauce, increase heat to high and bring to a boil. 

Add mussels, then cover saucepan tightly and cook, shaking saucepan occasionally, until all mussels have opened, 7-8 minutes. Discard any mussels that did not open. Add ginger and cilantro and stir to combine thoroughly. 


Serve immediately in large bowls.
