Vietnam Bacon-Wrapped Beef on Skewers


This recipe was taken from centuries old cooking techniques and when possible applied modern cooking methods and/or ingredients.  It uses Asian cooking styles, Asian Spices, Asian Sauces and Asian Ingredients.  The style of cooking may have a slight alteration while still maintaining the dish's overall purpose.  In this blog we touch on recipes that may be predominant for the Chinese Cuisines.  We will also share recipes based upon country, or regions such as: Burma, Cambodia, Indian, Indonesia, Japan, Korea, Laos, Malaysia, Nepal, Philippines, Singapore, Sri Lanka, Taiwan, Thailand, Tibet and Vietnam.  Some cuisines are considered South Asian, South East Asian dishes, Central Asian and/or Middle Eastern and may not be strictly connected to a specific country or culture.



Recipe makes for 4 Servings


8oz beef fillet or rump, cut across the grain into 12 strips

12 thin strips or streaky bacon

ground black pepper

4 bamboo skewers, soaked in water for at least 30 minutes

MARINADE:

1 tbsp peanut oil

2 tbsp fish sauce

2 tbsp soy sauce

4-6 garlic cloves, crushed

2 tsp sugar


Directions:


Mix all of the marinade ingredients in a large bowl until the sugar dissolves. Season generously with black pepper. Add the beef strips, coating them in the marinade and set aside for an hour. 

Preheat a griddle pan over a high heat. Roll up each strip of beef and wrap it in a slice of bacon. Thread the rolls on to the skewers, so that you have three on each one.


Cook the bacon-wrapped rolls for 4-5 minutes, turning once, until the bacon is golden and crispy. Serve immediately with dipping sauce.
