Korea Green and Golden Zucchini Thread Salad (Hobak Namul)

This recipe was taken from centuries old cooking techniques and when possible applied modern cooking methods and/or ingredients.  It uses Asian cooking styles, Asian Spices, Asian Sauces and Asian Ingredients.  The style of cooking may have a slight alteration while still maintaining the dish's overall purpose.  In this blog we touch on recipes that may be predominant for the Chinese Cuisines.  We will also share recipes based upon country, or regions such as: Burma, Cambodia, Indian, Indonesia, Japan, Korea, Laos, Malaysia, Nepal, Philippines, Singapore, Sri Lanka, Taiwan, Thailand, Tibet and Vietnam.  Some cuisines are considered South Asian, South East Asian dishes, Central Asian and/or Middle Eastern and may not be strictly connected to a specific country or culture.



Recipe makes for 4-6 Servings


2 green and 2 yellow medium zucchini

1 large carrot, peeled

1 Korean green chili or jalapeno

salt

2 tsp sugar

ground white pepper

juice from 1/2 large lemon

1 tsp grated fresh ginger

1 tsp sesame oil

toasted sesame seeds for sprinkling


Directions:


Trim the zucchini and halve them lengthwise. Remove the seeds with a teaspoon and discard. Using a box shredder or mandolin, cut the zucchini and carrot into threads. Thinly slice the chili to about the same thickness as the zucchini.

Place zucchini in a colander and sprinkle with 1 tsp salt, let stand for 15 minutes. Wring out the excess moisture. Do this 2-3 times to extract as much water as possible but handle the zucchini gently to avoid crushing. Repeat with the carrot.

Combine zucchini, carrot and chili in a medium bowl and fluff them up. Sprinkle with sugar and pepper. Stir in salt to taste and mix well. Add lemon juice, ginger, and sesame oil. Sprinkle sesame seeds, toss and serve.
